Pulled Pork Wrap

After making the pulled pork pizza two nights in a row because it was so good, we decided to use what we thought would be the remainder of the pulled pork in wraps.  Turns out there is more left which we have freezed for later use in a pasta.  These wraps turned out to be delicious and worthy of sharing, hence they are here as well as an alternative way to use these ingredients. This is an easy and healthy way to use up leftovers. With no further ado....

Ingredients

  • Pulled Pork with Chipotle BBQ Sauce (find the recipe here)
  • Coleslaw (find the recipe here)
  • Mustard Sour Cream (find the recipe here)
  • 4 tortillas/wraps
  • 1 avocado
  • 4 handfuls of baby spinach leaves

Method

  1. Nuke your tortillas for 30 seconds in the microwave to slightly warm them
  2. Start by adding 1/4 of an avocado to your wrap
  3. Add spinach
  4. Add coleslaw
  5. Add pulled pork
  6. Top with mustard sour cream to taste (I like quite a lot as you can see)
  7. Wrap and eat!

My Take Aways

Three words. Simple. Tasty. Good.
A great way to use up leftovers, including any other veggies that you have in your fridge.
